ingredients
- 2 -3 chicken breasts
- 1 (8 ounce) can chicken broth
- 1 bay leaf
- 1 (8 ounce) can Rotel Tomatoes
directions
- Place all ingredients in a crock pot.
- Heat on low or medium until cooked through.
- Should be able to shred chicken with a fork easily.
- Chicken should not be pink.

I wanted a simple shredded chicken that wasn't too spicy for my kids to enjoy. I doubled this recipe and used one can of mild rotel and one can of lime cilantro rotel. I think I should have just used 8 oz. of water/broth as this came out very watery, but it did suceed making a very moist and juicy chicken. I cooked this on low for about 8 hours and it was perfect. I served in tacos and am looking forward to using this chicken in several other recipes as well. Thanks for posting!
