Sesame Fish

"I always get the request from friends especially Ness Diwa to prepare this dish for dinner. He used to say "Please cook "that" fish dish as I initially didn't know what to call it. It's one of my quick and easy 'there's an unexpected guest' preparations!"

  • Wash fillets of fish ( after which, I prefer keeping them in a little amount of milk to remove "fishyness") Pat dry and dip in beaten eggwhite and cornstarch. Keep aside.
  • Heat 2 tablespoons corn oil and pan fry fillets for about 2-3 minutes.
  • Add oyster sauce and 1 1/2 teaspoons cornstarch dispersed in 1/2 cup water. Stir in sesame oil and add salt and pepper to taste.
  • Garnish with julienne of spring onions or scallions.
  • Serve with hot rice.

I have lived a good deal of my almost half a century out of the Philippines. My longest stay in the country was when I was completing my Bachelor's Degree in Communication Arts at the University of Santo Tomas eons ago... I love cooking aside from shopping...for kitchen gadgets, knick-knacks, etc. Top of my favourites would be eating, though, and pouring through books; travel and cookbooks. Larousse Gastronomique, Nigella Lawson's Feast and my complete Harry Potter collection are just a few of the books I won't part with...not even with my bestest best friend! With the amount of things I love...There are very few I truly despise and refuse to understand. Say, homewreckers and women who think they can just take somebody else's husbands or boyfriends away! Whichever way though, I always take situations and try to view things both ways -flexibility!
