- 1 large onion, chopped
- 2 garlic cloves, finely chopped
- 14.79 ml vegetable oil (I prefer peanut) or 14.79 ml peanut oil (I prefer peanut)
- 198.44 g can sardines, drained
- 2 large tomatoes, peeled and chopped
- 236.59 ml water (approx.)
- cayenne pepper (or more, to taste)
- 1 1 bunch collard greens or 283.49 g frozen spinach
directions
- In a large heavy pan, brown the onion and garlic in the oiil. Add the other ingredients and cover.
- Simmer for about 20 minutes and serve over rice.
