Any type of tomatoes cooked this way will do, but the Roma tomatoes have a good flavour. I cook tomatoes like this quite often.
- Cut the tomatoes in half.
- Drizzle with olive oil.
- Season with salt and freshly ground black pepper.
- Roast in hot oven for about 15-20 minutes.
These were just OK for me. They needed some zing of some kind. Maybe some garlic or parmesian cheese? I hate giving low reviews but these just didn't do anything for me.
