Roasted Yellow Squash

"I love yellow squash, but it seems to be really hard to come by! I was so excited when I was buying groceries this afternoon and they had beautiful fresh squash in stock! They are delicious no matter how you cook them, but this is what i came up with tonight, and they were amazing!"

  • Combine water, oil, and garlic in a roasting pan. Add squash and season with salt and pepper. Using your hands, turn the squash in the oil mixture to make sure it is well coated.
  • Bake at 220C for 20-30 minutes, until just starting to brown, stirring halfway through cooking.
  • Divide baby spinach between palte. Top with squash, and drizzle with a small amount of the pan juices.

  1. Sometimes the simplest dishes are the best! Loved the contrast in colors between the squash and the spinach. This was perfect after a long workday....very little work involved with delicious results.
     
  2. What a lovely way to prepare squash! So easy, the cook time was right on, and just delicious. I liked the serving on the spinach, with the pan juices drizzled on. My new favorite way to make yellow squash - thanks for sharing a great recipe!
