Roasted Honey Dijon Potatoes

ingredients
- 1 lb potato, cut into 1 inch pieces
- 1 small onion, thinly sliced
- 1⁄4 cup Dijon mustard
- 1⁄4 cup olive oil
- 1 -2 teaspoon honey
- 1 tablespoon chopped fresh parsley
- salt and pepper
directions
- Set oven to 375 degrees.
- Mix together mustard, honey, oil and salt and pepper; add to the potatoes and onion slices.
- Pour the sauce over potato/onion then toss well coate.
- Place in a greased baking pan.
- Bake for 35-40 minutes or until potatoes are tender.
- Sprinkle fresh parsley over potatoes.

I wish I could give this TEN stars! It was outrageously good. I hope my picture does them justice, because my family went wild over them. We will be making these often since they are so easy and delicious! I added a little sprinkling of Herbs de Provence and it is an understatement that these were TO DIE FOR! Thank you for this recipe. :)

Kitt another wonderful side dish that we enjoyed! I used yukon gold potatoes and doubled them so we would have leftovers. The honey mustard sauce is very good and tastes great on the potatoes. I added the potatoes to a zippered plastic bag then added the other ingredients. Tossed them around a bit in the bag then placed on a cookie sheet and baked for about 45 minutes. If you like honey mustard you will enjoy these a lot. Made and reviewed for KC's Grilling Tag Game.

I am not surprised...another great recipe from Kittencalskitchen! I liked these, they were definitely different. I made these as a side dish to steak (used Kittencalskitchen recipe for marinade and tenderizer for pork or beef). Between the honey in these potatoes and the honey in the marinade, I may have been on honey overload. But, that has nothing to do with the recipe, again, both recipes from Kittencalskitchen were a hit with me.

These have a good taste and are very easy to make! I used regular yellow mustard instead of the Dijon mustard. I will try it the next time with the Dijon to see if it makes a big difference in the finished taste! I used 4 tablespoons of honey instead of 2! I added 4 drops of hot sauce at the beginning of cooking, I did these on the stove top rather than in the oven, it took the same amount of time, either way it will work.

Totally awesome !!! These have become our favorite potatoes. Very easy to make. Followed recipe exactly and they are to die for. Also tried them with Sweet Potatoes (not yams)for a healthier substitute to regular potatoes along with a pinch of cayenne pepper instead of the black pepper. Also sprinkled a bit of ground flaxmeal for that healthy touch and they were very good too, however I myself prefer the regular potatoes. Thanks for the yummy keeper recipe.
