  • Preheat oven to 450 degrees. Rub both sides of fish with olive oil and sprinkle with the pepper. Place on foil-lined baking sheet.
  • Bake 15 to 20 minutes or until flakes easily with a fork.

DIABETIC AND LOW-SODIUM MENUS: Make this with no salt and lower sugar by marinading while your oven pre-heats in the juice of half a fresh lemon, a dash of dill weed and just a teaspoon (or less) of olive oil, and skip the tomato/caper tapenade. A great recipe as is, though -- great for a family -- especially on a recession budget!
