Refrigerator Pickles

1 gallon
ingredients
- cucumber
- 3 large onions
- 4 cups sugar
- 4 cups cider vinegar
- 1 1⁄2 teaspoons mustard seeds
- 1 1⁄2 teaspoons celery seeds
- 1 1⁄2 teaspoons turmeric
- 1⁄3 cup salt, table salt is fine
directions
- Slice and layer cucumbers and onion in a gallon jar.
- Mix remaining ingredients in a large pan and bring to a boil.
- Carefully pour over cucumbers and onions.
- Cool.
- Stir.
- Keep in fridge.

Made these pickles last year. We used everything in the garden: strips of peppers, carrot slices, cauliflower florets, summer squash chunks, green beans, onion slices and yes, even cukes! So delicious, we made 2 gallons. After the pickles sat for a week in the gallon jars, we moved the pickled veggies into smaller quart and pint jars and gave a bunch away. Can't wait to make them again. YUM!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
