Really Low Fat, Low Cholesterol and Low Sugar Banana Bread

ingredients
- 473.18 ml bananas, very ripe
- 177.44 ml fat free sour cream
- 78.78 ml honey
- 78.78 ml sugar
- 29.58 ml Smart Balance butter spread
- 7.39 ml baking soda
- 4.92 ml vanilla
- 7.39 ml baking powder
- 29.58 ml applesauce (no sugar added)
- 414.03 ml all-purpose flour
- 1 egg
- 236.59 ml walnuts, chopped
directions
- Mash 4-6 bananas (depending on size) to make ~ 2Cups. I mash a bunch and freeze in baggies.
- Add the rest of the ingredients and mix, being sure to mix the butter evenly.
- Pour into 6 mini loaves or 2 regular size loaves. These will rise a bit so allow room.
- Bake in 350 degree oven for 45-50 minutes for mini loaves or muffins, 50-60 minutes for regular size loaves.

No rating -haven't made it yet. Just wanted to share, I had good experience substituting butters with coconut oil and sugars with agave syrup. Coconut oil is solid but melts as soon as you touch it (it's so good on your skin!), so I melt it on defrost function in microwave to a totally liquid state. Did I say that it has NO cholesterol? Agave syrup has lower glycemic index then white and brown sugar, and honey. Try it.
