ingredients
- 3 egg whites
- 3⁄4 cup skim milk
- 1 cup low-fat yogurt
- 3⁄4 cup applesauce
- 2 cups wholemeal flour
- 1⁄2 cup rolled oats
- 1⁄2 cup oat bran
- 3 teaspoons baking powder
- 2 teaspoons cinnamon
- 3⁄4 cup raisins
- 3⁄4 cup dried apricot, diced
directions
- Beat egg whites lightly.
- add milk, yoghurt and apple sauce.
- In a separate bowl combine dry ingredients and dried fruit.
- Add liquid to dry ingredients, combine with care.
- Spoon into muffin tins.
- Bake 180 C for 20 minutes.

I love the health aspect of this recipe. I used only the apricots in order to save on the sugar content however I do thing that they would benefit from the addition of 1/4 cup of Splenda. If the added fruit sugar from the raisins they will likely be just fine as written. These muffins are dense textured and heavy. Thats not unexpected with the whole wheat, oats and bran. I used fat free vanilla yogurt which added nicely to the flavor. Thanks Kate.Reply
