ingredients
- 1 cup quinoa
- 1 cup diced red capsicum
- 1 cup edamame (shelled and boiled)
- 1⁄2 onion, diced
- 1⁄2 cup dried cranberries
- 1⁄2 cup totasted pine nuts

Dressing
- 80 ml olive oil
- 80 ml white wine vinegar
- 1 tablespoon Dijon mustard
- 1⁄2 teaspoon sugar
- salt and pepper
directions
- Cook quinoa in 2 cup swater.
- Cool and toss with the rest of the ingredients.
- For dressing shake all together and add as much as you like to salad.
