This is quick recipe for Chorizo. I usually make this for Chorizo and eggs on weekends. Although it is so easy you could make it any day of the week.

  1. Dice the onion small to fine.
  2. In a large skillet or cast iron skillet. Sweat the onion with 1 tablespoon of oil on med heat for 4-5 minutes.
  3. Add the garlic and sweat for 1 minute.
  4. Add the pork sausage, increase the heat to med/high and cook until done. While cooking use the back of spoon to crumble the sausage into small bits.
  5. Decrease the heat to med/low and add the spices (paprika, salt, pepper, garlic, onion, chili, and cumin powders). Stir until well incorporated. cook for an additional 1-2 minutes.
  6. Add the red wine vinegar and stir well. Cook for another 2-3 minutes.
