Directions

  1. Combine flour, soda, powder, cinnamon, nutmeg & salt.
  2. In a separate bowl cream butter & sugar - add pumpkin, egg, & vanilla. Beat until light & creamy.
  3. Mix in dry ingredients until well blended.
  4. Drop by tablespoon onto greased cookie sheet.
  5. Bake @ 350 for 15-20 minutes or just until edges are beginning to brown. COOKIES WILL STILL BE VERY SOFT when removed from oven.
  6. Allow to cool on rack.
  7. Drizzle glaze over top of cookies.

Just made these for Halloween. Yum. A soft cake like cookie with just the right amount of pumpkin and spice. I needed to add just a little more milk to the glaze. I will put this under favorites in my cookie recipe collection for sure. Easy to make too. Thanks for sharing!

Loved these - so light an fluffy. I think next time I will add cloves for some extra kick. I didn't even use the glaze - they were tasty without!

Very easy recipe. Love the seasonal flare. Tasted like a sugar cookie with pumpkin in it (which I liked). Very fluffy. Will make each fall. So easy.
