I've been altering this recipe for years till now it's exactly how I want it. I use homemade pumpkin puree which is similar to the pumpkin in the can.
- Mix the sugar, eggs, oil and pumpkin; beat with electric mixer several minutes. Add the remaining cake ingredients until well combined.
- Bake in a lightly greased 9x13 inch pan at 325 degrees F for 25-30 minutes till toothpick comes out clean. Cool.
- Frosting: Mix the cream cheese, vanilla and butter until smooth. Slowly add the powdered sugar and enough cream for spreading consistency.
