- 29.58 ml olive oil
- 340.19 g boneless pork loin chops, cut into 1/2 cup pieces
- 1 medium onion, diced
- 236.59 ml celery, diced
- 118.29 ml green pepper, diced
- 1419.54 ml chicken broth, low sodium
- 411.06 g diced tomatoes
- 14.79 ml garlic, chopped
- 4.92 ml marjoram, dried
- 4.92 ml thyme, dried
- 4.92 ml paprika
- 2.46 ml salt
- 2.46 ml black pepper
- 2 medium potatoes, diced
- 439.41 g light kidney beans, drained
- 340.19 g coleslaw mix
directions
- In a large pot, add olive oil and brown pork, onions, celery and green peppers.
- Add diced tomatoes and chicken broth and spices to pot. Mix thoroughly.
- Let pot simmer for about 1 hour.
- Add diced potatoes, kidneys and coleslaw mix to pot.
- Simmer for about another 1/2 hour.
- Serve!.
