Pistachio Fudge

  • Line an 8-inch square pan with foil, allowing foil to extend over sides of pan.
  • Spray with no stick cooking spray.
  • Melt chocolate in microwave, as directed on package of chocolate.
  • Beat cream cheese in large bowl with electric mixer until smooth.
  • Gradually beat in sugar on low speed until well blended.
  • Add melted chocolate, extracts and food color; mix well.
  • Stir in chopped pistachios.
  • Spread evenly in prepared pan.
  • Garnish with additional pistachios, if desired.
  • Refrigerate at least 1 hour or until firm.
  • Use foil to lift out of pan onto cutting board.
  • Cut into 25 (1 1/2-inch) squares.
  • Store in refrigerator.
  • Substitute: One bag (12 ounces) white chocolate chips can be substituted for the white chocolate squares.

  1. I made this and all I can say is OH BOY AM I EVER IN TROUBLE NOW! This recipe is sooo easy and then OH SOOO silky and smooth. I cannot believe I made fudge!! Thank you for sharing this wonderful recipe!!
     
  2. By weight, 3C of confectioners' sugar is equal to 375gr. This is a bit too much. Please use weight in your ingredients. I tripled the almond extract to compensate the sugar. I have the fudge setting now, but licking the bowl says it needs adjustments.
     
  3. This fudge is so smooth full of pistachio flavor. Easy to make, and plenty to share with friends and family. I also put some in Holliday tins as gifts.

Tweaks

  1. I found that 1/4 tsp of almond extract was not nearly enough. I had to use 1 tsp to get the right flavor. Could have been the extract itself I taste test as I'm mixing. I love this recipe and have made it several times. Pistacio is my favorite fudge. To kick it up a notch, top it with a layer of 50/50 dark and milk chocolate from your favorite candy bars. Do this after the fudge has chilled, also decorate with pistachios.
