I found that 1/4 tsp of almond extract was not nearly enough. I had to use 1 tsp to get the right flavor. Could have been the extract itself I taste test as I'm mixing. I love this recipe and have made it several times. Pistacio is my favorite fudge. To kick it up a notch, top it with a layer of 50/50 dark and milk chocolate from your favorite candy bars. Do this after the fudge has chilled, also decorate with pistachios.
