Pineapple Casserole

"This was given to me by a good friend. At first glimpse, I think I said something intelligible like, "EWWWWW". But, I gave it try and my kids love it. I can't even get it to the plate. They eat it out of the pan as soon as it comes out of the oven. Now it's a traditional side at Thanksgiving. Thanks Toni!"

  • 1 (20 ounce) can pineapple chunks
  • 12 cup sugar
  • 3 tablespoons flour
  • 1 cup shredded cheddar cheese
  • 14 cup melted butter
  • 12 cup buttery cracker crumb (I use Club crackers)

directions

  • Drain pineapple, reserving 3 tablespoons of juice.
  • Combine sugar and flour, stir in reserved pineapple juice.
  • Add cheese and pineapple chunks, mixing well.
  • Spoon mixture into 1 quart casserole.
  • Combine melted butter and cracker crumbs, stirring well.
  • Sprinkle over pineapple mixture.
  • Bake at 350 for 20-30 minute or until crumbs are lightly browned.
  • *This is an excellent side dish to ham and I usually double this recipe.
  • Enjoy!

I also received this recipe from a friend,and I only made it because every other recipe she had ever gave me was wonderful.So I tried it and its awesome.I make this and server it with ham yummy!! Thanx for posting so I don't have to dig out my recipe cards and search.The only change I have to this is I use Ritz crackers.Great little sidedish!!!
     
  2. Oh my my... I have fallen in love! This is without a doubt one of the best side dishes around. Wasn't quite sure what to expect but boy oh boy did it ever surpass the ordinary. I served this with "recipe #78399" and butternut squash. Thank you so much...I can't wait to make this again. Did I mention that it makes a great snack after dinner lol.
     
  3. This is one of the best side dishes I've found in over 40 years of cooking. There are never any leftovers. Goes wonderfully with baked ham.
