  • 1 egg
  • 12 cup milk
  • 14 cup vegetable oil
  • 1 12 cups flour
  • 12 cup sugar
  • 2 teaspoons baking powder
  • 12 teaspoon salt
  • 1 cup chopped fresh peaches or 1 cup frozen peaches, thawed

  • In a bowl, beat egg; add milk and oil. Combine flour, sugar, baking powder and salt; stir into the egg mixture just until moistened. Stir in the peaches. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 for 20-25 minutes or until a toothpick inserted in a muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

  2. I just made two batches of these and my kids really liked them fresh out of the oven. They will be part of their breakfast menu during school. I found this recipe in Taste of Home Quick Cooking 2000 Annual Recipes Book. Thanks for posting this yummy recipe. * Note instead of milk you can sub in 1/2 cup sour cream
