- 2 tablespoons extra virgin olive oil
- 1 onion, finely chopped
- 1 tablespoon minced garlic
- 1 (28 ounce) can crushed tomatoes
- 1 (28 ounce) can diced tomatoes
- 1 pinch crushed red pepper flakes
- 3⁄4 cup vodka
- 2 tablespoons chopped parsley
- 1⁄2 pint heavy cream
- salt and pepper
directions
- In a large sauce pan, sauté the garlic, onions, and red pepper flakes in the olive oil.
- Add the crushed and diced tomatoes.
- Bring the mixture to a boil over medium heat.
- Add the vodka and a pinch of salt and pepper to taste.
- Simmer uncovered over medium-low heat for about 8-10 minutes.
- Add the cream and parsley.
- Turn heat to low and simmer covered one hour.
- Toss with penne rigate or drizzle over cheese ravioli. Sprinkle dishes with fresh grated parmesan. BUON APPETITO!
