Substituting potatoes for a crust makes this quiche deliciously different! Serve it with cantaloupe slices in summer and quartered oranges in winter. Add real or imitation bacon bits for variety.

  1. Preheat oven to 400 degrees.
  2. Place frozen potatoes in microwave and cook on High for 30 seconds.
  3. Spread potatoes evenly in 9-inch glass pie plate that has been sprayed with nonstick cooking spray.
  4. Sprinkle potatoes with salt and pepper to taste.
  5. Spread cheese evenly over potatoes.
  6. Spread broccoli evenly over cheese.
  7. Beat eggs well with water.
  8. Pour carefully over broccoli.
  9. Bake for 30-35 minutes, or until center is set and top is golden brown.
  10. Serves 4.
  11. NOTE: This recipe tested at high altitude (over 3,500 feet).
  12. Your cooking time may be shorter.

I rated this so high for two reasons: 1, it was SO easy! 2, All of my brunch guests loved it! I did, however, use frozen hash browns in place of O'Brien potatoes. I also added some cubed ham with the broccoli, and used milk to mix with eggs instead of water.

I loved this! So simple and very tasty! I doubled it--because I knew it was going to be good and I added some chunks of ham and swiss cheese to everything else. I will definitely make this again! Thank you!

This recipe was a real "find." It couldn't be any easier to make! I microwaved broccoli, then chopped it. I added a small bit (one piece) of ready cooked bacon. I used a mix of cheddar, provolone, and mozz. cheese. I liked the creaminess the provolone gave it! My mixture looked pretty full in the pan, so I took a previous reviewer's suggestion and used an extra egg (4). This cooked very evenly and tasted great. The small bits of bacon went nicely with the broccoli and the potatoes are nice and tender in the eggs. This reminded me of a "Bisquick Impossible Pie," but this is an equally good alternative for when I'm out of Bisquick. I can see this recipe coming in handy often! Note: I served with a cantalope, grape, and canned peach fruit salad and a broccoli slaw with balsamic dressing and sunflower seeds. Thanks Elizabeth, for posting. Roxygirl
