Very simple. Vegan. You can basically add anything; cranberries and/or pecans, chocolate chips for kids, sliced apple. You can also substitute 1/3 apple sauce for the banana.

The only reason I did not give this recipe five stars is because they might be disappointing to someone hoping for a low fat vegan version of the fluffy Belgian waffles you get in a breakfast place. I decided to try this recipe because I wanted to use up an overripe banana and wanted a healthy vegan waffle. When I saw this recipe I was skeptical that it would really work but decided to give it a try anyway. The recipe is very fast and simple to put together. Because I read a review that had sticking problems I greased my waffle iron between each waffle. I had no sticking problems but they were a bit more difficult to remove from the iron than other waffles. They take a long time to cook. There is a lot of water that has to cook out of them and it probably took about five minutes per waffle. I also let them cook about one minute past the time when the "ready" light came on because the first one I tried was still a bit soft and doughy inside. Once I got the hang of them they came out great (see photo). I will be making these again.

  1. Combine all ingredients in blender and blend until smooth.
  2. Pour into waffle iron.
