Norwegian Raisin-Beer Bread

- 1⁄2 cup milk
- 1⁄2 cup beer
- 1 tablespoon butter or 1 tablespoon margarine
- 2 1⁄2 cups bread flour
- 1⁄2 cup rye flour
- 1 tablespoon gluten flour
- 3 tablespoons brown sugar, packed
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon ground cinnamon
- 1⁄4 teaspoon ground ginger
- 1⁄8 teaspoon pepper
- 1⁄8 teaspoon ground cloves
- 1 teaspoon active dry yeast or 1 teaspoon bread machine yeast
- 1⁄2 cup dark raisin
directions
- Add the ingredients to the machine according to the manufacturer's directions.
- Select the basic white bread cycle.

This makes an outstanding loaf of bread. The flavors are very unique, unlike any yeast bread I have ever made before. It was extremely moist. The spices gave it a wonderful aroma and a subtle spicy flavor. The texture was fine, but not so dense as to be heavy. I would classify it as a sweet bread, which seemed odd to me since it is a rye bread. I used dark rye flour (because that is what I had on hand) and Bud Light Beer. You really must try this one! If you don't have any bread flour on hand, use plain flour and increase the gluten to 2 Tablespoons. If you want make it without a bread machine, mix all the dry ingredients first. Them mix all the wet ones. Make a well in the dry bowl, add the wet, and gently mix together. Let sit for an hour, or until doubled in volume. Take it out and knead on a lightly floured surfaceuntil it looks a bit shiny or til your arms get too tired. ;) Shape the dough into an oblong and place dough into buttered loaf pan. Cover and let rise until it reaches the top of your pan, more or less. Bake in a preheated oven at 375° until it sounds hollow when you tap on the brown top (45 minutes about). I know these are not the world's most precise directions, but baking is an art. Don't worry, it will still taste great, even if you mess up a bit. Experience makes it better. Enjoy!

I am currently a stay at home Mom and wife (aka: homemaker, domestic engineer, chauffeur, etc.). My husband and I made this choice about 2 1/2 years ago. At the time I was averaging 72 hours/week +. Our kids were complaining that they never saw me, and one of them was even getting in trouble (too little supervision apparently). We got the troubled teen through high school, and she is currently preparing for college. Things have improved a lot so I am considering going back to work part-time while the kids are gone to school (if the right opportunity presents itself).

<br>I love to cook, especially trying new recipes. I get tired of the same ol', same ol'. I also love reading cookbooks and the history of recipes. I always hated doing all the dishes afterwards, so I did a lot of one dish meals whenever possible. Recently, my husband bought me a new dishwasher, so now I am cooking up a storm! Everyone is loving it.
