Mushroom and Barley Soup

  • Melt butter. Saute leeks, celery and onions till soft.
  • Combine stock cubes, water.
  • Add to onion mixture with barley.
  • Add parsley, bay leaf, thyme, salt and pepper.
  • Cover and simmer 1 hour stirring occasionally.
  • After 1 hour add potatoes and mushrooms and simmer for 30 minutes.
  • Remove bay leaves.
  • Add milk/cream (this is optional - you don't need it) and serve.
