Ok - my heritage has been revealed. :) These are simply wonderful. A favorite among our community, they're sure to bring a smile to your face. Enjoy!
- 473.18 ml fresh corn or 473.18 ml canned corn (creamed or kernel)
- 2 eggs, beaten
- 59.14 ml flour
- 4.92 ml salt
- 0.59 ml pepper
- 4.92 ml baking powder
- 29.58 ml cream
- 59.16 ml fat (butter, oil or margarine)
- Combine eggs, flour, baking powder, salt& pepper with the corn.
- Mix thoroughly.
- Add cream to mixture.
- Melt fat in frying pan& drop corn mixture by spoonfuls into the hot fat.
- Brown on both sides.
- Serve w/ syrup.
- (pancake/waffle syrup).
This recipe was great! Easy and fast.Served with a varity of syurps the family was asking for another batch.As I cook the last.
My ex gobbles these things up and says they are good enough to be a snack. I like them too..must admit not as much as he does. I add a little more flour than the recipe calls for though.
Wonderful! I used fresh corn scraped off the cob and followed the recipe. They were crunchy and sweet, just right! OH! I forgot, I did add about 1 T sugar...so tasty!
