Out of this world! My Mother-In-Law serves this salad in a glass bowl and it is gorgeous.

- 1 egg, beaten
- 1 cup sugar
- 3 tablespoons vinegar
- 2 tablespoons water
- 2 tablespoons butter
- 1⁄2 lb Spanish peanut
- 6 -8 large bananas, sliced
- Over low-medium heat, cook the egg, sugar, vinegar, water and butter until thickened, stirring constantly.
- Layer in serving bowl, alternating bananas, nuts and sauce.
An interesting & unusual salad for me to be serving, but then, I do like bananas & peanuts, so . . . Shared this with a neighbor couple who were a bit hesitant at first, but they admitted afterwards that they were happy with it, & it certainly didn't go to waste! Thanks for posting the recipe!
