This is a really heavy pancake. We seem to be an oatmeal loving family ... anyone own any stock?
- 2 eggs, beaten
- 2 cups buttermilk
- 1⁄2 cup oatmeal
- 1 teaspoon salt
- 2 cups flour
- 1 teaspoon sugar
- 1 teaspoon baking soda
- Mix eggs, buttermilk and oatmeal.
- Add other dry ingredients.
- Pour 1/4 cup on lightly greased griddle.

I halved the recipe and still got 4 good sized pancakes. This is a good basic recipe, but a bit too heavy for us. Thank you for posting! Made for 1.2.3 Hits
I made a single serving and loved the outcome of these more healthy pancakes. I soured skim milk with vinegar for the buttermilk and used 1 tsp of Splenda mixed with cinnamon, nutmeg and a touch on clove for the sugar. The oatmeal was doubled and a mix of old fashioned and quick. I ended up adding around another 1/4 cup of flour to thicken the batter as I like thick fluffy pancakes. My topping was unsweetened applesauce and another sprinkle on the Splenda mix. A lovely Sat brekkie.
