Mandarin Chicken Salad with Orange Juice Dressing

"I have had this recipe for many years, and do not remember where I originally got it. The dressing really sets the salad off, adding a wonderful sweet and sour tang to the salad. This salad makes an attactive, colorful place setting. Pleasing to the eye and palate. Preparation time does not include cooking the chicken."

  • Mix the first 6 ingredients together.
  • Chill.
  • Mix the dressing ingredients together and chill.
  • Serve on lettuce leaves.
  • Decorate with fruit around the edges.
  • Spoon salad dressing over the salad mixture when served.

  1. A terrific light lunch or add some potato salad for a complete meal on a hot summer night! I poached 2 chicken breasts, cut them into strips, but omitted the grapes as they are very expensive at this time of the year. Thanx Trisha!
     
  2. Great salad. I ommited mayo and added only 1/3 cup of oil to the dressing, also I used granny smith apples insted of grapes. Came out great,low fat,full of flavor and easy to make. Thank you.

  5. This salad made a wonderful light meal for a warm summer evening. Even DH, who tends not to favor salad as a main dish, complimented me on the meal. I didn't have any celery & used Splenda instead of the sugar in the dressing (I find that no one in the family notices it when I sneak that in). Otherwise I folowed the recipe exactly. I threw some dried cranberries into the portion I saved to take to work tomorrow. Thanks, Trisha!

<p>I was born and raised in Tulsa, Oklahoma. Have lived from Arkansas to Memphis to Maine to Minnesota to Texas to CA and now Illinois since I have been married. I have 4 children (3 grown daughters and 1 grown son) and 11 grandsons. The oldest turned 12 in Aug.'14 and the youngest was born Oct. 5, 2014. &nbsp;I taught elementary school (both public and private) for 16 years, then worked for 6 years as a principal for a private Christian school. I am now a Dyslexia Testing Specialist and Tutor in private practice and I love my work. The cookbook I have used most during my 37 years of marriage is the Better Homes and Garden New Cook Book (red and white checkered.) I still get it out frequently and several of its recipes have become regulars in my house.</p>
