Mammaw's Southern Style Potato Salad

ingredients
- 1360.77 g idaho potatoes (peeled and diced)
- 236.59 ml sweet onion (finely diced)
- 118.29 ml celery (finely diced)
- 6 large eggs (boiled, dice only 4 eggs for the salad and slice and save 2 for the top.)
- 59.14 ml diced pimento (but adds color, it's not enough to add any flavor.) (optional)
- 236.59 ml sweet gherkins (diced) or 236.59 ml relish (diced)
- 59.14 ml yellow mustard (just for color, adds no flavor.)
- 59.14 ml sugar
- 14.79 ml salt
- 14.79 ml pepper
- 236.59-354.88 ml Miracle Whip (depends on how thick you like it.)
- 4.92 ml paprika (for the top.)
directions
- Boil potatoes until they are tender but firm, do not over cook or the salad will be like mashed potatoes.
- Drain potatoes immediately and let them cool completely.
- Add (to the cooled potatoes) all other ingredients.
- Toss lightly until thoroughly mixed making sure not to mash the potatoes.
- Top the salad with the sliced eggs and sprinkle with Paprika.
- We love it while it's still warm.
- Refrigerate if you like it cold for 2 hours.
- Enjoy!

Just made this for the 4th celebration tomorrow, can't wait to unveil it. I upped the serving to 12 people, cooked a pound of thick sliced bacon, diced it, and sprinkled it over the sliced eggs on top.<br/>Very easy to prepare, I had small red potato's on hand so I just cut them in fours and boiled. It looks great and tastes great. Highly recommend!

I have learned alot about cooking and baking from my Grandmother's and my Aunt's.We do a lot of canning, things like Jellies and Apple butter, Chow Chow,Mixed pickles, Strawberry jam, Gr. Beans and Pickled Beats. And my favorite is the homemade Strawberry Jam. We have even had several Mollasses Stir Offs in the Fall at my Church & we make Apple Butter and Cider. I was raised in the Southeast and we love to COOK. It must be something in the water? LOL & If it involves cooking count me in!!!
I Love the Food Network and all the cooking shows. I Have found alot of great recipes and made alot of friends from this Web site.
