  • Combine the "brine" ingredients into a large stock pot, a clean 5 gallon bucket or maybe even a large ice chest. Whatever will hold your turkey and enough water to cover it. Pour in the apple juice, spices and some ice until there's enough to keep it chilled Add water to keep it totally submerged. Keep it in a cold dark place, like the fridge or a basement. Keep sealed over night. (or 6-8 hours).
  • In the morning remove turkey from brine water and drain into the sink. Stuff the center of your bird with the "filling" ingredients. Rub your bird down with sunflower oil, oilve oil or whatever you like to use. Place in a browning bag and cook according to package instructions. (About an hour and a half I believe).
