Macaroni with Cheese & Ground Beef

"I jotted this down from a Reader's Digest magazine and have yet to make it,but plan on it soon....it sounds soooo yummy!"

  • Using a large deep saute pan heat oil and saute onion,garlic& red pepper for about 2 minutes.
  • Crumble in the ground beef and cook about 10 minutes or until cooked thoroughly.
  • Heat the beef broth on the stove or in the microwave.
  • Add hot broth,macaroni,tomatoes,& seasonings to the ground beef mixture.
  • Simmer about 10 minutes or until it has reduced and macaroni is cooked.
  • Mix in sour cream& cheese and cook over low heat another 5 minutes continuing to stir until creamy.
  • Mix in parsley& serve.

  1. I found this recipe easy to make but no one in the family really took to it. The first few bites are not bad but then it just starts to taste bad. I also didn't find it to be the most appetizing meal to look at.
     
  2. This was quick to make and a BIG hit with my kids. Next time I make it I'm going to try to sneak in a few vegtables though. Some finely diced carrots, brocolli, celery and mushrooms just to make it a bit healthier. I think I'm going to try it with ground chicken as well.

  4. Amazing! I will never make hamburger helper again - even my DH liked it and he is fussy. I substituted chili-ready canned tomatoes for the chopped fresh tomatoes since I didn't have fresh tomatoes. Thanks for the great recipe!

Tweaks

  1. Very tasty! I wanted to try this because of the fresh tomatoes rather than canned. My Kiddo doesn't like tomato so I figured the fresh would deteriorate enough in the cooking process to make her happy...it did. Otherwise, I did use ground turkey instead of beef, and green pepper for the red, but kept the rest the same. I'm sure I'll be making this again. Thanks!
     
  2. Very tasty. The only thing I did differently was to use egg noodles instead of macaroni noodles. Next time I'll add some red pepper or something similar to make it spicy.

About me....well...let's see,right now I am a married, stay-at-home Mom to two beautiful children, a 10 year old daughter and a 7 year old son....they are the "lights" of my life, which I think I pretty much spent waiting for them! I feel so very lucky (and truly blessed) to be their "Mommy". I don't know that I have a fave cookbook, (and I have rarely opened one of the many I have, since finding Zaar.) I just LOVE recipes and have been "acquiring" them since I was a teenager! Actually I think I bought my first cookbook in like grade two or three, a cookie recipe book from one of those scholastic book orders!
