Low - Fat Meatloaf

  • Preheat oven to 400 degrees.
  • Mix all ingredients together well (except for green olives and sweet pickles).
  • After you mix, if desired, add either sweet pickles (which is my favorite, or green olives).
  • Mold into oval loaf, and place on baking sheet.
  • Bake for 45 minutes.
  • Add extra ketchup if desired and bake another 1/2 hour.

It's about time that I updated my profile! It's been quite a long time. I am 31 years old, born and raised here iun Cincinnati, OH. I am engaged to be married to a wonderful man. We have 3 children- minus the bun in the oven :) I have always loved to cook. I was always an overweight child, but decided it was time for a change when I turned 19. I went from 360 lbs to 145 now... well maybe 150 now, lol! Most of my recipes are a healthy spin on family faves, no one wants to eat what dosent look and taste delicious, right?
