Little's Chicken and Pasta Soup

From "Fast Chicken" / The Hawthorn Series This is quite a chunky soup. Add more stock if preferred.

This made a wonderful soup for lunch today. I used one large chicken breast which was browned with the onions. The mushrooms were dried shitake which added a depth to the stock. In place of the spaghetti I used fideo which is a short cut pasta resembling broken spaghetti. The basil leaves were cut and sprinkled over each bowl at serving time. Ingredients Nutrition


  1. Fry the onion until soft and golden.
  2. Add the chicken , mushrooms,,pasta and the stock.
  3. Bring to the boil, reduce heat and simmer for 10 minutes,.
  4. Stir in fresh basil leaves and season with salt and pepper.
