Little a This & That Meatloaf Muffins

"What is meatloaf but a way to use up items in the fridge? This recipe uses a little bit of what I had in the fridge tonight. My family will eat meatloaf only in muffin form. I'm sure it could be made in a loaf if cooked longer, about an hour. I put ketchup on only half the muffins for immediate eating (and next day leftovers) and then leave the rest bare to freeze."

  • Preheat oven to 400 degrees F.
  • Mix all dry ingredients together and combine well. Add all wet ingredients and meat and mix with hands until well dispersed.
  • Scoop into muffin tins either sprayed with non-stick spray or lined with muffin cups. Top with ketchup.
  • Bake at 400 for 25-30 minutes.
