These sound wonderful! Anything fried has to be good! UPDATE: After Kiwi's problems, I must caution anyone trying this recipe. I had not tried them before posting this recipe. I am hoping to make these and figure out what is needed to make it a good recipe!

Saturn, I am really sorry to have to only give this a 2 star rating. The first problem was that I had to put the nuts back into the food processor 2 extra times to process them fine enough that they would stick together in any way at all... yes the oil was there but no matter how fine I pulsed and then processed, it never really would hold together well, hence I also had difficulty in rolling them into balls.. squeezing them really hard at first to kind of compact them helped the most. I deep fried them in hot oil and a few balls didn't even survive the gentle drop into the oil, they just fell apart.The others cooked well enough but once they were cooled there was difficulty in trying them becuase one bite and they disintergrated into peanut crumbs... I could have overlooked much of these problems if I had been delivered a smooth full, firey peanut-ty taste, but sadly that was lacking too.. they tasted dry despite the recomended amount of oil. I just know that with the addition of the right binding agent in this it could be a recipe with potential... the ingredients sounded soooo good, working them out in practice seems to be the difficult thing. Thanks anyway for the recipe to try... they can't all be winners I suppose, and who knows, maybe someone else will have more success than I did. Best regards... Kiwidutch:)
- 1 lb roasted peanuts
- 1⁄4 cup peanut oil (to taste)
- 1 small onion, finely chopped
- 1 teaspoon cayenne
- 1 teaspoon salt
- oil (for frying)
Directions See How It's Made
- Grind or pound the nuts adding just enough oil to make a smooth paste.
- With wet hands, squeeze the mixture to remove any excess oil.
- Sauté the onions, cayenne & salt in a tablespoon of oil until golden.
- Knead into the nut paste.
- Shape into 1" diameter balls adding a few drops of water if necessary to make them hold together.
- Drop the balls into hot oil or flatten & fry in a skillet.
- Cook for 2 to 3 minutes until the outsides are crisp.
