Cherry Peanut Butter Balls

  • In a small mixing bowl, cream the butter, peanut butter and vanilla; mix well.
  • Gradually beat in confectioners' sugar.
  • Cover and refrigerate for at least 1 hour.
  • Pat cherries dry with paper towel.
  • Dust hands with additional confectioners' sugar.
  • Wrap each cherry with a rounded tablespoon full of peanut butter mixture; shape into a ball (Peanut butter mixture may need to be refrigerated occasionally while rolling cherries.).
  • Cover and refrigerate for at least 1 hour.
  • In a microwave, melt chocolate chips and shortening; stir until smooth.
  • Dip peanut butter balls in chocolate; place on waxed paper.
  • Refrigerate for at least 1 hour or until set.

  1. DH problem said it best, they are addictive. I made half a recipe of the peanut butter/sugar mixture and had enough for over 20 cherries. I used chocolate chips that I tempered in the microwave and eliminating the need for the shortening. These will be a hit at Christmas time. Made for Aussie Swap.
     
  2. Although it took me considerably longer than 10 minutes to make these (So, I'm old & slow & I took my time!) I did enjoy the prep, & when they were finally set out on a finger food buffet, they were one of the first things to disappear! Will definitely be making these little tasties again (& again)!
