- 1⁄2 cup butter, melted
- 1 cup light corn syrup
- 1 cup sugar
- 1⁄2 cup cocoa powder
- 4 eggs
- 1 teaspoon vanilla
- 1⁄4 teaspoon salt
- 1⁄2 cup pecans, chopped
- 1⁄2 cup flaked coconut
- 1 (9 inch) unbaked pie shells
directions
- Preheat oven to 325.
- Combine butter, light corn syrup, sugar and cocoa into a heavy sauce pan and cook over LOW heat stirring constantly until sugar is dissolved. Let cool.
- Add to the mixture: 4 eggs, 1 teaspoon vanilla and 1/4 teaspoon of salt. Stir well.
- Add to the mixture: 1/2 cup chopped pecans and 1/2 cup flaked coconut.
- POUR filling into a 9 inch UNBAKED pie shell and top with 1/2 cup of pecans.
- Bake at 325 degrees for 55 minutes.
