Lime Cilantro Vinaigrette
- 118.29 ml chopped shallot
- 59.14 ml fresh lime juice
- 59.14 ml chopped fresh cilantro
- 14.79 ml minced garlic
- 118.29 ml vegetable oil
- salt and pepper

Salad
- 709.77 ml thinly sliced red lettuce
- 709.77 ml thinly sliced napa cabbage
- 236.59 ml chopped cooked chicken breast
- 2 seeded chopped plum tomatoes
- 1 thinly sliced red bell pepper
- 1 thinly sliced yellow bell pepper
- 1 chopped avocado
- 78.78 ml crumbled tortilla chips
- 59.14 ml thawed frozen whole kernel corn
- 59.14 ml toasted pumpkin seeds or 59.14 ml pepitas
- 59.14 ml thinly sliced onion
- 118.29 ml crumbled queso anejo or 118.29 ml feta cheese
directions
- For the vinaigrette, combine the shallots, lime juice, cilantro and garlic in a bowl and mix well. Whisk in the oil gradually. Season with salt and pepper. You may prepare up to 1 day in advance and store, covered, in the refrigerator. Bring to room temperature before serving.
- For the salad, combine the lettuce, cabbage, chicken, tomatoes, bell peppers, avocado, tortilla chips, corn, pumpkin seeds and onion in a bowl and toss to mix. Drizzle with the vinaigrette and mix well. Sprinkle with the cheese.
