- 4.92 ml minced garlic
- 0.25 ml salt
- 14.79 ml unsalted butter
- 14.79 ml chopped onion
- 4.92 ml curry powder
- 59.16 ml coconut milk
- 4 shrimp, shelled and deveined
- 4.92 ml white sugar
- 9.85 ml light soy sauce
- 4.92 ml oyster sauce
- 29.58 ml diced pineapple
- 14.79 ml raisins
- 354.88 ml cooked rice
- 4.92 ml chopped green onion
- 14.79 ml coriander leaves
- 0.25 ml white pepper
directions
- Heat oil in a very hot wok.
- Fry the garlic and salt in the butter until fragrant.
- Add the onion and curry powder and mix well.
- Add the coconut milk and shrimp and simmer for 3 minutes.
- Season with sugar, soy sauce and oyster sauce.
- Stir, then add the pineapple, raisins and rice.
- Reduce the heat and stir-fry for another 2 minutes mixing well.
- Garnish with green onion and coriander.
- Sprinkle with pepper to serve.
