Island Mojito Chicken and Rice With Salsa Tropicale

  • Combine all marinade ingredients together in a blender. Blend until smooth. Pour into a zipper seal bag. Add chicken breasts and allow to marinade in refrigerator for 2-4 hours. Discard marinade after that time.
  • At this point the chicken may either be roasted in the oven at 425 F or cooked on a grill. Cook just until meat is no longer pink in middle. About 20 minutes. Turn once during cooking.
  • Rice: Add olive oil to a medium sauce pan with a tight fitting lid placed over medium heat and warm for one minute,.
  • Add rice and saute stirring almost constantly until rice begins to turn clear and just a little brown on the edges.
  • Toss in remaining ingredients EXCEPT WATER and saute for one minute.
  • Add water, stir and cover tightly.
  • Reduce heat to medium-low and cook for 20 minutes. Lift lid and check to ensure rice is thoroughly cooked. If not, recover, turn off heat and let pan remain covered on warm burner for a few minutes. Fluff with fork and remove from heat when rice is tender.
  • Salsa: Place diced tomato, bell pepper, hot pepper, onion, orange and cilantro in a bowl.
  • In a separate bowl mix the zest and lime, balsamic vinegar, sugar, salt, pepper and cayenne, if desired.
  • Pour liquids over fruit and mix well. Let stand at room temp for at least 5 minutes. Taste and adjust seasoning as desired. Serve salsa at room temperature. NOTE: Salsa can be made up to 24 hours ahead, mixing liquid and fruit together just before cooking the rice and allow salsa to warm to room temperature.
  • To SERVE: Place chicken in center of plate, surround with a circle of rice, place salsa on top of chicken.
  • Note: Feel free to adjust seasonings to your liking. Amount of hot pepper can be increased or omitted if you prefer.

  1. Great meal to make earlier in the day and then just cook later. I tasted the salsa made as directed except the balsamic and it is VERY good but I had bits of mango and pineapple that needed used so added them. Very good addition and then I added a splash of ginger beer ( non alchoilic) WOW after this set for awhile the flavour was awesome. Made for Family picks ZWT 5 for team Zaar Chow Hounds
     
  2. Being the spice nuts that we are here at my house we just absolutely LOVED this chicken. Everyone was ummm'ing and licking their fingers. I had everyone chopping and helping get the work done so it was even more appreciated! I LOVED the marinade for the chicken but the salsa was to die for. Have you posted the salsa by itself? You should! I added some fresh mango and pineapple bits just because I had them in the refrigerator and needed to use them. But I didn't leave ANY of the ingredients out at all! Next time I will double the salsa because we dumped it all over the plate, even on the rice! Thank you for an absolutely delightful flavor bursting recipe!   4. The chicken really took the flavour of the marinade and the salsa was great. I think the cayenne over powered the flavour of the rice a bit, but over all, a really nice dish.
     
  5. OMG! OMG! This is fabulous! Super! Outstanding! Wonderful! This is one of the best recipes I have made from Zaar! The flavors of this dish are out of this world and so perfect! The marinade on the chicken is PERFECLTY complemented with the salsa! I could eat this again and again. The rice was also VERY GOOD! This is such a wonderful recipe! The salsa is so good! I hope everyone tries this one! Chef - Good luck - this is truly a winner in my book!
