ingredients
- 2 cups cooked chicken
- 1 (10 3/4 ounce) can condensed cream of chicken soup (undiluted)
- 3⁄4 cup mayonnaise
- 1 cup cooked white rice
- 1 tablespoon lemon juice
- 1 tablespoon grated onion
- 1⁄2 teaspoon salt
- 3 hard-boiled eggs (chopped)
- 1⁄2 cup corn flake crumbs
- 2 tablespoons melted butter
directions
- Preheat oven to 375 degrees F.
- Mix together all but corn flake crumbs and butter.
- Place in buttered casserole dish.
- Mix corn flake crumbs with butter and sprinkle over top Bake uncovered at 375 degrees F for 35 mins.

Fixed this for lunch yesterday and instead of cream of chicken (I was out of) I used cream of mushroom. I added a little fresh grated garlic and followed the recipe the rest of the way. Very good. I will definately make it again only using cream of chicken soup as directed. Thank you. Made for My-3-Chefs Nov.09.
