Homemade Seasoned Rice Mix & Chicken Rice Casserole

"From Taste of Home. This rice mix is very popular in our home - goes well with chicken, pork or fish. It makes great gifts also when packaged in a jar with a nice ribbon. I make it with brown rice and adjust the cooking time as needed. The casserole is comforting and satisfying as well. The prep/cooking time is based on the casserole recipe. **NOTE** Where the ingredients list 1 cup rice, mix - it is calling for the Homemade Seasoned Rice Mix."

  • Combine all ingredients in a storage container with a tight-fitting lid.
  • Yield: 3-1/2 cups.
  • **TO PREPARE RICE AS A SIDE DISH**.
  • Combine 2 cups water and 1 tablespoon butter in a saucepan; bring to a boil.
  • Stir in one cup mix.
  • Reduce heat; cover and simmer for 15-20 minutes.
  • Yield: 6 servings.
  • **CHICKEN RICE CASSEROLE**.
  • In a greased 2-qt. casserole, combine chicken, vegetables, rice mix, onion and mushrooms.
  • Combine water, soup, onion salt and thyme; mix well.
  • Pour over the rice mixture; stir.
  • Cover and bake at 375° for 55-65 minutes or until the rice is tender, stirring occasionally.
  • Sprinkle with potato chips.
  • Yield: 6 servings.

  1. I also got this recipe from TOH. I used the rice mixture for part of my Xmas gift baskets this year and everyone really liked it. I have also made it as a casserole and my family likes it too.
     
  2. I only made the rice part of this, not the casserole. It was good, but a bit bland. I will probably make it again when in a pinch for a side dish, but it is unlikely to become a regular dish in our home.
