Try this on scones or toast. I'm guessing at the prep and cooking times.

  1. Beat eggs and sugar until pale and doubled in volume.
  2. Stir in lemon rind and juice.
  3. Place bowl over a pan of simmering water.
  4. Add butter piece by piece, whisking constantly until thick.
  5. Serve cold.

Loved, Loved Loved it! So easy and tasty! I will never buy Lemon Curd again. And now, I can use this as a starting point for other curds. Thank you so much!

Great Lemon Curd. The recipe was simple and clear. The taste .... mmmmmmmm .... fantastic! We enjoyed some in little tart shells. *Made and reviewed for Zaar World Tour 3* Photo also being posted

Haha, I had an open jar of storebought lemon curd in the fridge, and after tasting this in comparison to that one, I tossed the remainder of the storebought jar because it tasted artificial to me! This did take a long time to thicken up, but I think it's because I had turned the heat down too much. Once I increased the heat a bit, it thickened up pretty quickly. I used most of this in Lemon Drop Trifles by gailanng (which it was lovely in, I might add). So fresh-tasting, and pretty simple to make, too. Thanks for posting! Made for The Honeys for ZWT8
