Lemon Spread--Lemon Curd?

"Lemon spread for toast or cake. Great on english muffins or crumpets!"

ingredients

• 1⁄2 cup sugar
• 1 large egg
• 3 tablespoons lemon juice
• 2 tablespoons butter

directions

1. Beat egg well.
2. In small saucepan, stir together all ingredients.
3. Without bringing to a boil, cook over moderately low heat, stirring constantly, until mixture thickens--about 5 minutes.
4. Cover and chill about 1 hour.
