My mom got this recipe from a heart healthy recipe book. This is our version of the original recipe. It gives the chicken a nice light flavor. For best results on a grill, cook chicken on aluminum foil. Overnight marinading not included in time.
- 4 tablespoons safflower oil
- 4 tablespoons olive oil
- 1⁄8 cup lemon juice
- 2 garlic cloves (minced)
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon tarragon
- Mix all ingredients together.
- Pour over 1 - 2 lbs of chicken (I used either chicken tenders or cut boneless chicken breast into strips).
- For best results marinade overnight.
Absolutely delicious marinade! I did as you suggested, cutting 2 chicken breasts into strips & marinating it all overnight, then onto the grill for a wonderful chicken treat!
