- 1⁄2 cup milk
- 1⁄4 cup coconut oil (or butter)
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 3⁄4 teaspoon salt
- 1⁄2 teaspoon cinnamon (optional)
- 1⁄4 teaspoon nutmeg (optional)
- 2 tablespoons raisins (or nuts, also optional)
- 1 1⁄2 cups oatmeal (rolled or quick oats, I use rolled)
directions
- Mix the liquids and egg, stirring well- the butter/coconut oil will start to congeal again quickly, so get the liquids moving to break it up.
- Add the sugar and powders. Stir well, then dump in the oatmeal and raisins/nuts.
- Pour into an 8x8 (a little cakey) or 9x13 pan (crispier) and bake 25 min at 350 degrees.
- Serve alone or with yogurt, fruit, or ice cream.
