WW friendly version of dragonflydmc's Ground Beef and Summer Squash Skillet ( 6 points per serving.

  1. Cut squash about 1/4 inch thick.
  2. In a large sauce pan, combine tomatoes, tomato sauce, onions, water and seasonings. Add squash on top, then rice. Crumble ground beef on top.
  3. Bring to a boil, then cover, lower heat and simmer 50 minutes. Stir occasionally. Add more water if needed.
  4. Let sit 15 minutes before serving.
