Ground Beef with Spinach and Brown rice

  • In a large non-reactive skillet, sauté beef, onion and garlic over medium high heat about 5 minutes, stirring frequently until beef is browned and crumbly.
  • Drain off excess fat and stir in remaining ingredients.
  • Bring to a boil and reduce heat to low.
  • Cover and simmer 30-35 minutes or until rice is tender.

  1. Awful. The ingredients sound like they'd go together but don't. We ate two bites a piece and threw the rest out. That's a lot of food to waste. BTW: It's called "Ground Beef with Spinach and Brown Rice," yet calls for white rice. I doubt the brown rice would've helped.
     
  2. I was looking for something different to do with ground beef...this recipe fit the bill. It was easy (although it took much longer then 35 minutes for the rice to cook). I didn't have any dill weed, so I just through in some basil, crushed red pepper and some other dry herbs - it came out very tasty. Also, since my spinach was frozen, I cooked it in water while browning the ground beef. Even my two kids both under 4 yrs old ate it up - plus they ate spinach and didn't complain! I'll make this again. Thanks.
     
  3. This stuff was really good! I read the comments of the other reviewers and used Italian-style stewed tomatoes to give some extra flavor. I also think it needed salt, but it's always better to add salt at the table anyway. I like recipes like this, because I make up a batch on the weekend and take it for lunch all week. I'll be sure to make it again and again. Thanks for posting!
     
  4. This was a really good idea and a good option to making a big pan of lasagna. It seemed that the spinach didn't really add much to the recipe at all and both my DH and I found it bland (even though I did saute some garlic along with the beef and onions). It needs something to give it a liitle zest. Perhaps some red pepper? Or maybe I'll use homemade sauce next time...
     
  5. This was yummy - but after several tries, I ended up adding a whole lot more dill just to get the flavour to show up. I didn't drain the fat from the meat, and I blanched the frozen spinach and put it in still a little drippy, otherwise there is not enough liquid for the rice to cook properly. My mom borrowed this recipe from me and uses it all the time now.
