Grilled Vegetable Sandwich

I had a wonderful grilled veg. sandwich when I visited the Florida Keys recently with goats cheese. This is similar, minus the cheese. Feel free to add it if you like! From 30 Minute Meals.

Directions

  1. Combine all ingredients (for mayo) in food processor and pulse (or blender).
  2. Sandwich: Using a pastry brush, brush olive oil on the vegetable slices and the portobello mushrooms.
  3. Season them with salt and pepper.
  4. Place vegetables on a hot grill (or under broiler) and cook until they are tender.
  5. Once vegetables are done brush sliced bread with olive oil and grill (or broil) on both sides.
  6. To assemble, slice portobellos into 1/4-inch slices, spread both sides of the grilled bread with herbed mayonnaise and then top with 1 slice each of grilled vegetables and a quarter of the mushrooms, and finish off with lettuce and top with remaining piece of bread.
  7. Enjoy!

This was SO amazing! Made it as written except using whole wheat bolillo rolls for the bread. It was absolutely delicious and we will definitely make it again.

Takes a while to make, but this is a delicious sandwich. I really liked the herbed mayo. I wasn't sure if the thyme was to be fresh or dried. I used dried, a little over a teaspoon. I also added more hot sauce I had to roast the veggies instead of grilling them. Bet it would be even better with the smoky taste from the grill. Served on garlic sourdough bread. Thanks for sharing the recipe.

This was such a great grilled sandwich. I made it in my indoor grill since there is still snow on the ground here. I used miracle whip and a bit more hot sauce than called for. Over all a great sandwich!
