Nice and simple to prepare. I was grilling thick chicken breasts indirect on my Weber, so placing the eggplant slices directly over the hot coals made perfect use of the space. Be sure and let them get done enough so that they are slightly mushy which brings out the flavor. Off the grill, I added a little salt and fresh ground pepper, and then I tried with a little parmesan instead. I like just the flavor of this grilled eggplant recipe as is, adding the touch of salt and pepper. As to number of servings, way off. It was so delicious I ate half the eggplant in one sitting!
