Gluten Free Quinoa Pancakes

- 354.88 ml gluten-free flour
- 59.14 ml quinoa flour
- 1.23 ml xanthan gum
- 29.58 ml sugar
- 14.79 ml baking powder
- 1.23 ml salt
- 1 egg
- 354.88 ml lactose-free milk
- 44.37 ml canola oil
directions
- In a large bowl mix dry ingredients well.
- In a second bowl, mix wet ingredients.
- Whisk the liquid mixture into the flour mixture, using a wire whisk. Don't bother to whisk too vigorously, small lumps may still be visible, that's OK.
- Cook on a medium/hot oiled skillet, preferrably a non-stick one.
- Flip when lots of little bubbles are appearing on the surface.
- Please note that if your flour blend already contains guar or xanthan gum, there's no need to add the xanthan gum. Same for salt!

Love to cook and bake, always have. Our toddler DD is gluten and lactose intolerant and mom just can't stomach the idea that a lifelong gluten free or dairy free diet would simply mean settling for less. Finding yummy recipes that work therefor make me very happy, and ever so grateful for a site like this!!!
